Twice-cooked Pork
Ingredients:
450g fresh boneless pork or fresh, uncured ham
2 tabespoon soybean paste,
80g scallions or garlic shoots ,
1 tbsp sweet bean sauce
1 tabespoon vegetable oil, 1/4 cup meat stock
Method:
1. Wash the pork, boil and parboil it for 8 minutes. Drain and cut pork into 6 cm x 4 cm x 1.5cm slices . Set aside
2. Cut the scallions into pieces. Set aside.
3. Heat pan up til 180°C. Add pork, soybean paste, sweet bean sauce, scallions and meat stock. Stir-fry for 5 minutes until the soybean paste release its raw taste. Remove and serve.
