Red Bean Mousse Cake
Ingredients:
Mousse:
300g sweetened cooked rea beans, 50g sugar,
15g gelatine, 30ml water, 250g whipping cream,
250ml milk,1 slice sponge cake
Jelly:
5g gelatine, 150ml water, 100g sweetened cooked
rea beans
Method:
Mousse:
1. Put gelatine and water in a bowl. Heat over simmering water until gelatine dissolves.
2. Heat milk up to 80℃. Remove from heat. Add dissolved gelatine and mix well. Add sweetened cooked red beans.
3.In a separate bowl, beat whipping cream until fluffy. Add whipped cream to red bean mixture and fold in.
4. Place sponge cake on the bottom of a cake tin. Spoon mousse over sponge cake. Refrigerate for 4 hours.

Put gelatine and water in a bowl. Heat over simmering water until gelatine dissolves. Pour over set mousse. Sprinkle red beans on top.
Sweetened Red Beans:
Soak red beans in water for 3 hours. Cook in water until soft. Add suitable amount of sugar and cook until sugar dissolves.
